    Modern bread is an industrialised product designed for profit, not nutrition, in contrast to traditional bread, which provided the human body with practically all its nutritional needs, and contained from 20% to 30% more protein than its modern version. There are many differences between modern bread, and traditional bread. For starters, modern wheat is entirely different from heritage wheat. Secondly, traditional bread consisted of just three main ingredients, namely flour, water and salt, with perhaps yeast added in. In contrast, modern bread is made of enriched flour, that is the flour includes a lot of additives. Additionally, the glycemic index of modern white bread is typically even higher than that of milk chocolate or common table sugar.
